Cooked Salad Dressing (using flour)
25.00 mL sugar
15.00 mL flour
5.00 mL salt
5.00 mL Colman's Mustard
200.00 mL milk
1.00 beaten egg
15.00 mL butter
75.00 mL vinegar
Combine dry ingredients in heavy sauce pan. Add milk and mix well. Stir and
cook until smooth and thick. Blend small amount of hot mixture into egg,
then stir egg into remaining hot mixture. Stir and cook 2 to 3 min more.
Remove from heat and add butter. Slowly stir in vinegar. Makes about 300
mL.
