Spinach Salad with Lemon Vinaigrette

1/2 lb Fresh spinach, well rinsed
4 Strips of bacon, drained and cooled
3 Green onions, sliced
5 Mushrooms, sliced thin
1/4 c Olive oil
2 T Fresh squeezed lemon juice
1 cl Garlic, minced
1/2 ts Salt
1/4 ts Colman's Mustard
1/8 ts Freshly ground black pepper
1/4 c Freshly grated parmesan Cheese, optional

Cook bacon until crisp and drain. Set aside.

Rinse spinach well and spin dry. Trim stems and place in salad bowl. Add onions, bacon, and mushrooms. Combine olive oil, garlic, lemon juice, salt, pepper, and mustard in a small jar with a tight fitting lid. Shake well.

Pour over salad and toss well just before serving. Sprinkle with parmesan cheese, if desired.

Yield: 5 Servings.
